Apple Pudding


  • 450g (91lb) cooking apples, peeled, core removed, and chopped roughly, weighed afterwards
  • 125g (4 ½ oz) sugar
  • 1 tbsp water
  • 125g (4 ½ oz) soft butter
  • 125g (4 ½ oz) caster sugar
  • 2 eggs, beaten
  • ½ tsp vanilla extract
  • 125g (4 ½ oz) self-raising flour
  • 25g (1oz) caster sugar, for sprinkling
