Ingredients

  • 6 Potatoes, peeled and cut into quarters
  • 1 medium head of green or Savoy cabbage cut into 2" pieces - about the size of the potatoes
  • 1 large onion, chopped
  • 4 garlic cloves chopped
  • 1 green or red bell pepper chopped
  • 2 tomatoes chopped
  • salt and pepper to taste
  • 1 cup frozen corn (canned is fine, drained)
  • 2 tablespoons Paprika
  • Olive oil
  • (1/3 cup) Chinese Parsley or cilantro (coriander)
  • 1 tablespoon dried Oregano (or fresh)
  • 1 cup cream or whole milk
  • 1/2 cup Swiss or Mexican Jack cheese (shredded)
  • Water
