Ingredients

FOR PASTRY:

• 2 1/2 cups all purpose flour
• 1 tsp salt
• 1tsp sugar
• 1/2 pound cold unsalted butter, cut up in pieces
• Small glass of very cold (ice)water

FILLING:

• 8 tart apples, granny or golden peeled, cored chunked or sliced
• 1/2 cup sugar
• Juice of 1/2 lemon
• 1 tsp cinnamon
• Pinch of nutmeg, or more if prefer
• tbs flour
• Cold unsalted butter, diced
• 1 egg beaten with 2 tbs heavy cream for eggy glaze Sugar
