Ingredients
- 6 handfuls Penne pasta
- 3 handfuls Mushrooms, sliced thickly (about 4mm thick, for those who like precision in their measurements!) (I like button mushrooms for this dish)
- Pancetta cubes (I use the Sainsbury's Taste the Difference duo-packs, and would allow 1 packet per 2 people)
- 1 large fresh tomato, chopped into 1 cm cubes
- Approx quarter/half cup double cream
- 1 clove garlic, finely chopped
- Handful of fresh tarragon, chopped
