1 cup Coarse bulgur
1 3/4 cups Boiling water
2 tablespoons Minced fresh dill (or 1 teaspoon dried dill)
3 Scallions, finely minced
1/2 cup Lightly toasted pine nuts
A small handful of currants
1/2 teaspoon Salt (or more, to taste)
Black pepper to taste
A drizzle of extra virgin olive oil
2 tablespoons Fresh lemon juice (or to taste)
