1 tablespoon Olive oil
1 pound Boneless, skinless chicken breast meat, cut into julienne strips (1 1/2 x 1/4-inch)
2 Medium carrots, peeled and thinly sliced
1 bunch Scallions, chopped
1 Small red bell pepper, seeded, de-ribbed and thinly sliced
1/8 cup Low sodium soy sauce
1/3 cup Chopped celery
2/3 cup Leftover veggies (clean out your crisper!)
1 to 2 cloves Garlic, pressed
1/2 teaspoon White pepper
2 tablespoons Cilantro, chopped
2 tablespoons Sliced toasted almonds-OPTIONAL
