Apricot Chicken With Almonds


3-4 Boneless skinless chicken breasts (I cut in half prior to cooking)
3/4 tsp Salt
1/2 tsp Pepper
1/3 cup Slivered Almonds (optional)
1/2 cup Apricot preserves
1 tbsp Spicy brown mustard
1 tbsp Butter
1/8 cup Soy sauce (I use Gluten Free soy sauce)
