Ingredients

2 teaspoons White vinegar
2 tablespoons Granulated sugar
1 tablespoon Turbinado or granulated brown sugar
1 tablespoon Light brown sugar
1/4 teaspoon Cinnamon
1 Egg beaten with 1 tablespoon water
COMPOTE
1/3 cup Light brown sugar
Juice and strips of zest from 2 limes
3/4 cup Fresh orange juice
2 1/4 pounds Blueberries
MERINGUE
1/2 cup Plus 1 tablespoon granulated sugar
3 tablespoons Water
3 Large egg whites
1/2 teaspoon Cream of tartar
