Ingredients

4 cups Flour
4 cups Sugar
2 teaspoons Baking powder
2 teaspoons Baking soda
2 teaspoons Salt
2 teaspoons Cinnamon
6 cups Finely shredded carrots (about 2 pounds)
2 cups Salad oil (or 1 cup oil, 1 cup applesauce)
8 Eggs
1 cup Broken walnuts
For Cream Cheese Icing:
2 3-oz. Packages cream cheese
1/2 cup Butter or margarine (1 stick)
2 teaspoons Vanilla
4 cups Powdered sugar
1/2 cup Chopped walnuts
