1 tsp Extra-virgin olive oil
1 cup Grated part-skim mozzarella cheese
1 14-ounce Can artichoke hearts, rinsed and quartered
1/4 tsp Salt
Freshly ground pepper to taste
2 tbsp Chopped fresh parsley
1/4 cup Freshly grated Parmesan cheese
