2 tbsp olive oil 1 lb 2 oz (500 g) mixed boneless and skinless game, such as pheasant, partridge, venison, rabbit, and pigeon, diced 1 onion, sliced 1 carrot, sliced 1 parsnip, sliced 2 tbsp all-purpose flour 1 cup chicken stock 3/4 cup hard apple cider or apple juice 9 oz (250 g) cremini mushrooms, thickly sliced 1/2 tsp fennel seeds salt and freshly ground black pepper
