12 wonton wrappers, each about 10 x 9 cm Vegetable oil, for brushing Sea salt and freshly milled black pepper 1 firm, ripe mango Finely grated zest and juice of 1 lime 1/2 shallot, finely diced 1/2 red pepper, finely diced A knob of fresh root ginger, peeled and finely grated Wasabi paste, to taste
