Ingredients

  • 4 8 oz. tenderloin steaks
  • 4 tbls. of whole black peppercorns
  • 4 tbls. of honey
  • ---SAUCE---
  • 4 large shallots
  • 8 cloves of garlic
  • Half an oz. of fresh sage
  • 2 ½ oz. of Irish whiskey
  • 3 cups of veal stock
  • 3 cups of demi-glaze
  • 4 tbls of butter
  • salt
  • ---beer cheese BLINZES---
  • 1 ½ cups of flour
  • Half a cup of milk
  • 3/4 cup of beer
  • A wee pinch of salt
  • 3 eggs
  • 3 large russets
  • 1 cup of dry ricotta
  • 1 bunch of scallions
  • 3 tbls. of sour cream
  • salt and pepper
  • ---BEANS---
  • 16 oz. of long beans
  • 1 medium sized yellow onion
  • 6 cloves of garlic
  • ghee
  • 2-3 tbls. of red curry paste
  • 2 cups of tomato juice
  • 1 cup of red wine (I use Sula Dindori Shiraz, an Indian wine)
  • The juice of 2 limes
  • ½ tsp. of turmeric
  • ½ tsp. of cumin
  • salt, red pepper
