- 4 tbls. of whole black peppercorns
- 4 tbls. of honey
- ---SAUCE---
- 4 large shallots
- 8 cloves of garlic
- Half an oz. of fresh sage
- 2 ½ oz. of Irish whiskey
- 3 cups of veal stock
- 3 cups of demi-glaze
- 4 tbls of butter
- salt
- ---beer cheese BLINZES---
- 1 ½ cups of flour
- Half a cup of milk
- 3/4 cup of beer
- A wee pinch of salt
- 3 eggs
- 3 large russets
- 1 cup of dry ricotta
- 1 bunch of scallions
- 3 tbls. of sour cream
- salt and pepper
- ---BEANS---
- 16 oz. of long beans
- 1 medium sized yellow onion
- 6 cloves of garlic
- ghee
- 2-3 tbls. of red curry paste
- 2 cups of tomato juice
- 1 cup of red wine (I use Sula Dindori Shiraz, an Indian wine)
- The juice of 2 limes
- ½ tsp. of turmeric
- ½ tsp. of cumin
- salt, red pepper
