- FOR FILLING:
- 1 tbsp. butter
- 5 oz. mushrooms, sliced
- 3 spring onions, chopped
- 14 oz. canned fire-roasted tomatoes, drained
- 1/2 tsp. dried oregano
- 1 tbsp. chopped fresh basil, or 1 tsp. dried basil
- 1/2 cup pitted black olives, chopped
- salt and pepper to taste
- 1 garlic clove, minced
- 1/2 cup shredded cheddar or muenster cheese
