Creamy Spinach And Artichoke Tortellini Recipe

Ingredients

  • 3T olive oil
  • 1 onion(or 2 shallots)
  • 5 cloves garlic
  • 48-50oz crushed and/or diced tomatoes. Use more crushed for a less chunky sauce. I used 2 cans of diced and 1 can of crushed
  • 2 cans(14oz each) artichoke hearts, sliced(I used the "small" variety, which worked well)
  • 1lb specialty sausage links, chopped
  • 2 sprigs fresh rosemary
  • 1 large sprig fresh sage(or two... you want at least 8-10 leaves), rubbed but left whole
  • 1T fresh Italian herbs; oregano, basil, parsley(I used dry Mexican oregano and fresh basil)
  • 9-10oz fresh baby spinach, roughly torn
  • 2-2 1/2lbs fresh tortellini
  • 1 cup heavy cream
  • kosher or sea salt and fresh ground black pepper
