Algerian Vegetable Stew Recipe


  • 4 Tbs. olive oil
  • 2 medium zucchini cubed
  • 1 large eggplant, peeled and cubed
  • 2 large green bell peppers cut into small pieces
  • 1 med carrot, peeled and cut into small pieces
  • 3 med onions chopped
  • 1 whole head of garlic, peeled and crushed
  • salt and pepper as desired
  • 2 cups water
  • 2 cups stewed tomatoes
  • 1 Tbs dried basil or fresh equivalent


A Basic And Delicious Vegetarian Ethnic Dish. . One Can Add Different Seasonings As Desired.
