Ingredients
- 1lb cooked crawfish meat(sub crab or lobster if you can get it :)
- 1lb asparagus, tips only
- olive oil
- 2 eggs, hard boiled and chopped
- 2-3 stalks celery, diced
- 1/2 cup sliced ripe olives
- about 1 cup mayonnaise
- about 1/3 cup spicy tomato sauce(I use the type on the Mexican aisle at the market)
- 2 green onions, chopped
- 1T horseradish
- dash of fresh lemon or lime juice
- kosher or sea salt and fresh ground pepper
- soft dinner rolls, leaf lettuce and sliced tomatoes, to serve

Week 2 Of My NFL Weekends Series This Season: My Southern Twist On Crab Louis, Which Arguably Got It's Start In Seattle. Instead Of Serving Over A Bed Of Greens And Asparagus, I Added Them To This Slider Version. (week 2 Steelers-24 Seahawks-0)
