Adobo Chicken & Cilantro Rice Recipe

Ingredients

  • chicken Rub:
  • 2 tablespoons kosher salt
  • 2 teaspoons granulated garlic
  • 1 teaspoon ground cumin
  • 2 teaspoons granulated onion
  • 1 teaspoon paprika (for color)
  • 2 teaspoons tumeric (for color)
  • 2 teaspoons freshly ground black pepper
  • 1 tablespoon finely chopped fresh oregano leaves
  • 12 pieces of chicken (chicken thighs or drumsticks)
  • 2 tablespoons oil for frying
  • Sofrito:
  • 1 large yellow onion, finely diced
  • 1 medium green bell pepper, finely diced
  • 1 medium red bell pepper, finely diced
  • 4 cloves garlic, finely chopped
  • 3 cups long-grain rice
  • 1 bottle of beer
  • 2+1 cups chicken stock/broth
  • 1 bay leaf
  • 1 tsp salt, or to taste
  • 2 tsp pepper, or to taste
  • 1 cup frozen peas (not thawed) (optional)
  • 1 bunch or 1.5 cups of chopped cilantro (stems ok)
  • 1/2 bunch or 3/4 cup chopped flat parsley (stems ok)
  • 1 tablespoon chopped fresh oregano leaves
  • juice of 1 lime
  • Garnish:
  • lime wedges, chopped cilantro and chopped parsley

Description

This Recipe Started As Puerto Rican Arroz Con Pollo And Migrated To Peru. Serve It With Peruvian Aji Sauce For Some Seriously Rich, Authentic Flavor.
