Summer Vegetable Beef And Bowtie Soup Recipe

Ingredients

  • !lb. lean beef round cubes cut in small bite size pieces
  • 1 medium sweet onion diced or chopped
  • 2 large stalks celery diced or chopped
  • 2 small fresh zuccini sliced thin
  • 1 small yellow squash sliced thin
  • 4oz. fresh string beans sliced
  • about 6 oz. fresh lima beans
  • 3 ears white corn (remove from husks with knife)
  • 2 carrots peeled and sliced thin
  • 1 large can of whole tomatoes in puree
  • 1 16 oz. can cannilini beans drained
  • 2 bay leaves
  • one tbls. fresh thyme
  • two tbls. fresh oregano
  • two tbls, chopped fresh Italian parsley
  • kosher salt and fresh pepper to taste
  • 1 teaspoon hot sauce(more if desired)
  • 1 lime juiced
  • (dried herbs may be substituted use 1/2 amount)
  • olive oil to saute,about 2 tablespoons or as needed
  • water to cover all
  • Eight ounces of bowtie noodles (or any you prefer)
