Andouille Rice Cakes Recipe

Ingredients

  • 3 1/4 tablespoons vegetable oil
  • 1/2 cup chopped onions
  • 1/2 cup chopped bell peppers
  • 1 rib celery, chopped
  • 4 ounces andouille,or other spicy sausage chopped
  • 2 cups chicken or seafood stock
  • 2 teaspoons salt
  • hot sauce to taste
  • 1 1/4 tablespoons all-purpose flour
  • 3 cups cooked long-grain brown rice
  • 2 tablespoons chopped green onions
  • 2 tablespoons chopped parsley
  • seasoned flour or bread crumbs for dredging
  • vegetable oil for frying
