Ingredients
- 1 large tomato, halved then thinly sliced
- 1 sweet onion, halved then thinly sliced
- 1/2 tsp. pepper
- 1 tsp. onion powder
- 1 Tbsp. parsley, fresh or dried
- 1/2 cup Bisquick biscuit mix or whatever biscuit mix is available to you
- 1 (10 ounce) package frozen chopped broccoli, thawed and drained of any moisture
- Note: I also like to use broccoli Romanesco
- 1/2 cup grated parmesan cheese
- 1/4 cup butter, melted
- 2-3 eggs, beaten
- 1 cup sour cream
- 1 cup small curd cottage cheese
Description
This Is A Great Vegetable Casserole For During The Week, Weekends Or Potluck. It Can Be A Main Meal With A Fresh Loaf Of Bread Or A Side Dish.
