Taco Twist Soup Recipe

Ingredients

  • Ingredients:
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 tsp. olive or canola oil
  • 3 cups reduced- sodium beef broth or vegetable broth
  • 1 can ( 15-oz ) black beans, rinsed and drained
  • 1 can ( 14 ½ -oz ) diced tomatoes ( no salt added )
  • 1 ½ cups picante sauce ( try to find reduced-sodium)
  • 1 cup uncooked spiral pasta
  • 1 small green pepper, chopped
  • 2 tsp. chili powder
  • 1 tsp. ground cumin
  • ½ cup shredded reduced-fat – Low sodium cheddar cheese
  • 3 Tbs. reduced-fat sour cream
