Ingredients

  • apricot ice cream
  • 1 cup (250 ml) dried apricot halves, soaked in hot water for 1 hour and drained
  • 3 Tbs (45 ml) light corn syrup (golden syrup)
  • 1/2 tsp (2 ml) salt
  • 3/4 cup (180 ml) sugar
  • 4 egg yolks
  • 1 cup (250 ml) half-and-half or milk
  • 1 1/2 cups (375 ml) heavy cream
  • 1 tsp (5 ml) vanilla extract
