  • 3–4 tablespoons ice water
  • 1/2 cup graham cracker crumbs
  • vanilla Cream Filling
  • 1/2 cup granulated sugar , plus 2 tablespoons
  • 1/4 cup cornstarch
  • 1/8 teaspoon table salt
  • 5 large egg yolks , lightly beaten
  • 2 cups milk , whole or 2 percent
  • 1/2 cup evaporated milk
  • 1/2 vanilla bean , about 3-inches long, split lengthwise
  • 2 tablespoons unsalted butter
  • 1 teaspoon brandy or more to taste
  • whipped cream Topping
  • 1 cup heavy cream
  • 2 tablespoons confectioners' sugar
  • 1/2 teaspoon vanilla extract
