- 2-3 Large apples diced ( I used Granny Smith's)
- 3 Tb Organic Evaporated Cane juice sugar
- 3/4 tsp ground cinnamon
- 1/2 C water
- 1/4 C Bacardi rum
- 1/4 C shredded coconut
- 4 Large eggs
- 2 Sticks unsalted butter or Earth Balance Vegan Buttery Sticks--melted
- 1 C Organic Evaporated Cane juice sugar
- 1 1/4 C quinoa
- 1 3/4 C Arrowhead Mills Organic brown rice flour
- 1 tsp Aluminum Free baking powder

I Found This Recipe While Strolling Through Lucullian's Gluten Free Blog. A Great Way To Use Up The Quinoa Left Over From Last Night, With Some Fresh Apples In The Kitchen. I Had To Convert This Recipe From Metric, So I Thought I'd Post It Here, And Share
