- 2 lb chicken leftovers
- 1/2 green bell pepper, chopped finely
- 1/2 yellow bell pepper, chopped finely
- 1/2 red bell pepper, finely chopped
- 1 good sized onion, finely chopped
- 3 cups elbow or bow-tie macaroni
- 2 cups uncooked rice
- salt & pepper to taste
- 1 tbsp oregano
- 1 tsp garlic powder (NOT garlic salt!)
- 1 cup chopped celery
- 1/2 chopped carrots
- 1 cup diced tomatoes
- 1 can mushrooms, or 12-16 fresh, chopped
- Old cheddar, grated (AMOUNT TO YOUR PREFERENCE)
- mozzarella cheese, grated (AMOUNT TO YOUR PREFERENCE)
- 2 tbsp balsamic vinegar
- 1 tbsp lemon juice
- 1 tsp hot sauce
