Ingredients

  • 2 cups whole-wheat pastry flour or all-purpose white flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground ginger
  • 1 teaspoon salt
  • 2 large eggs, beaten
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 medium-size tart apples, peeled and cut into 1/2-inch cubes
  • 1/4 cup apple juice
  • 1/2 cup raisins -and/or- 1/2 cup unsalted mixed nuts (optional)
