- 3 scallions, diced
- roasted chicken meat, shredded (about a pound)
- 8 oz. white sharp cheddar cheese, shredded
- Sauce
- 3 tablespoons unsalted butter
- 1 small onion, finely chopped
- 3 tablespoons flour
- 1 teaspoon cumin
- 2 cups of hot *chicken stock
- About ½ a jar of a quality, all natural Chipotle salsa OR your favorite red enchilada sauce along with 1 canned chipotle chile in adobo sauce
- 2 cups freshly roasted pumpkin puree (or 1 can of organic pumpkin puree (15 oz)
- 1/2 cup sour cream or mexican crema
- kosher salt, to taste
