Carrot And Oatmeal Breakfast Cookies Recipe

Ingredients

  • Dry Ingredients:
  • 5 oz (1 cup) whole wheat pastry flour
  • 5 oz (1 cup) all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp table salt
  • 2 tsp cinnamon
  • 1/2 tsp allspice
  • fruit, Oat and Veggie Mixture:
  • 1 1/2 cups grated carrot*---(10 oz before peeling and trimming) use the finest holes on your box grater and pack them in
  • 1 cup your choice very finely chopped dried fruit--we used cranberries and apples
  • 1 cup rolled oats
  • 1/2 cup finely chopped nuts--optional
  • Wet ingredients:
  • 3/4 cup packed golden brown sugar
  • 1/2 cup (1 stick) butter, softened
  • 2 eggs
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla
