- 4 oz butter, softened to room temperature, plus extra for cake pan
- 3/4 cups hazelnuts (without skins)
- 3/4 cups sugar
- 4 large free-range or organic eggs, separated
- zest of 1 orange
- 2 tablespoons all purpose flour, sifted
- 3/4 cups fresh whole milk ricotta cheese
- a pinch of kosher salt
- 3 heaped tablespoons apricot jam
- 4 tbsp best-quality cooking chocolate (70% cocoa solids), finely grated
