Hazelnut Torte Recipe

Ingredients

  • 4 oz butter, softened to room temperature, plus extra for cake pan
  • 3/4 cups hazelnuts (without skins)
  • 3/4 cups sugar
  • 4 large free-range or organic eggs, separated
  • zest of 1 orange
  • 2 tablespoons all purpose flour, sifted
  • 3/4 cups fresh whole milk ricotta cheese
  • a pinch of kosher salt
  • 3 heaped tablespoons apricot jam
  • 4 tbsp best-quality cooking chocolate (70% cocoa solids), finely grated
