Afghan Sauteed Eggplant Recipe

Ingredients

  • 2 eggplants, peeled and cubed into chunks
  • 1 onion, chopped
  • 1/2 tbls garlic, chopped
  • 1/2 tsp turmeric
  • 1 tomato, chopped
  • 1 tbls tomato paste
  • 1/2 green or red bell pepper, diced
  • 2 cups warm water
  • 2 tbls olive oil
  • salt and pepper to taste
  • plain yogurt to garnish
