  • 4 cups chopped spanish onion
  • 1 cup diced celery
  • 1 cup chopped bell pepper
  • 1/3 cup margarine
  • 1/3 cup dark roux
  • 1/4 cup chicken base
  • 2 tablespoons diced jalapeño pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon sugar
  • 2 quarts water, divided
  • 3 cups sliced fresh mushrooms
  • 2 tablespoons chopped fresh garlic
  • 1/2 cup chopped green onion (white part only)
  • 1/2 cup chopped parsley
  • mixture of equal parts of cornstarch and water, for thickening (optional)
  • hot cooked rice
