- 1 lime, zested & halved
- 1 cup chicken stock, divided into 1/2 cups
- olive oil
- a handful of cilantro leaves, finely chopped
- chicken rub:
- 2 Tbsp: cumin, coriander, paprika, oregano, ancho chili powder
- 2 tsp: turmeric, kosher salt
- 1/2 tsp: cayenne pepper (add more if you like spicy), ground black pepper
