Baked Chicken Taquitos Recipe

Ingredients

  • 16 small flour tortillas
  • 4 boneless, skinless chicken breasts (thawed)
  • 1 medium yellow onion, diced
  • 1/2 cup green bell pepper, diced
  • 1/4 cup grape tomatoes, diced
  • 1 large garlic clove, minced
  • 1 lime, zested & halved
  • 1 cup chicken stock, divided into 1/2 cups
  • olive oil
  • a handful of cilantro leaves, finely chopped
  • chicken rub:
  • 2 Tbsp: cumin, coriander, paprika, oregano, ancho chili powder
  • 2 tsp: turmeric, kosher salt
  • 1/2 tsp: cayenne pepper (add more if you like spicy), ground black pepper
