  • 1 pound fresh asparagus cooked
  • 1 egg
  • 1 egg yolk
  • 2/3 cup half-and-half
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup freshly grated parmesan cheese
  • basil sprigs to garnish
  • Pastry:
  • 3 cups all purpose flour
  • 1/3 cup butter diced
  • 1/3 cup solid vegetable shortening diced
  • 2-1/2 tablespoons cold water
