- 6 6oz salmon fillets(or whole salmon, which you can later cut into serving size pieces), skin removed
- 6 flat breads or pita pockets
- For Ponzu Inspired sauce
- juice from 1 orange
- juice from 1 lime
- 2T rice vinegar
- 1T oyster sauce
- 1T Chinese hot mustard
- 2 green onions, sliced
- For Thai Pesto
- 3T fresh Thai basil leaves(can sub another basil, if desired)
- 3T fresh cilantro leaves
- 2T fresh mint leaves
- 2T fresh lemongrass OR 1T Thai seasoning blend with lemongrass
- 1 1-inch piece candied ginger
- 2 cloves garlic
- 1/4-1t red pepper flakes
- 3T peanut oil or olive oil
- fresh ground black pepper
Description
Salmon Fillets Are Grilled Or Broiled With A Ponzu Inspired Sauce Then Topped With A Zippy, Fresh Pesto And Either Wrapped In Flatbread Or Stuffed In A Pita For A Quick And Easy Sandwich.
