Hertzoggies Recipe

Ingredients

  • 250 g cake flour (half pd or 2 and a quarter cups or 560 ml)
  • 25g granulated sugar (37,5 ml / 3 tablespoons)
  • 10 ml baking powder (2 teaspoons)
  • 1 ml salt (quater teaspoon)
  • 125 g butter or margarine, room temperature(quater pound / 125 ml / half a cup)
  • 3 egg yolks from large eggs
  • 15 ml cold water (3 teaspoons)
  • Filling:
  • 75 ml smooth apricot jam (6 tablespoons)
  • 3 egg whites
  • 250 g sugar (half a pound / 250 ml / 1 cup)
  • 160 g shredded coconut (6 ounces / 500 ml / 2 cups)
