Apricot Oat Bars Easy Recipe

Ingredients

  • 10 ounces dried apricots (about 1 1/2 cups)
  • 3/4 cup boiling water
  • 3 cups uncooked rolled oats
  • 1/3 cup whole wheat flour
  • 1/3 cup all-purpose flour
  • 1 tablespoon kosher salt
  • 1/4 teaspoon ground cinnamon (optional)
  • 8 tablespoons unsalted butter (1 stick)
  • 7 tablespoons honey (6 n 1)
  • 6 tablespoons packed light brown sugar (I use 3 tab. Brown sugar Splenda)
  • 1/3 cup apricot jam
  • 3/4 teaspoon vanilla extract
