- 1 cup dried morels (1 ounce)
- 1 cup boiling water
- 1/2 cup heavy cream
- salt and freshly ground pepper
- 2 tablespoons ketchup
- 2 teaspoons rice wine vinegar
- 1 teaspoon minced fresh ginger
- 1 garlic clove, minced
- 1/2 teaspoon soy sauce
- all-purpose flour, for dredging
- 2 large eggs, beaten with 1 tablespoon water
- 1 cup finely crushed crackers or cracker meal
- vegetable oil, for frying
- 4 large bunches watercress, tough stems discarded
- 1 small red onion, halved lengthwise and thinly sliced crosswise
