A Very Tasty And Healthy Pot Made From Fresh Veggies Recipe

Ingredients

  • 5 tablespoons olive oil
  • 1 large onion, chunky chopped
  • 3 ripe peeled tomatoes, quartered
  • 4 large carrots, thickly sliced
  • 3 med potatoes, quartered
  • 150 grams (1/4 pound) mushrooms, cut in half if large mushrooms
  • 250 grams (1/2 pound) fresh green beans, trimmed & cut in half
  • 1 medium cucumber, split lengthwise then cut onto 1" slices
  • 1 green pepper, pips removed and cut into pieces
  • 1/2 a butternut or a wedge of crown or dry yellow pumpkin cut into chunks
  • 1 small head cauliflower, cut to florets
  • 1 small head broccoli, cut to florets
  • 1 can of peas (size not critical)
  • 1 large stick celery finely chopped
  • spice MIX
  • 1 tablespoon sugar
  • 1 teaspoon cumin
  • 1 teaspoon ground coriander
  • 2 teaspoons ground black pepper
  • 1 teaspoon ground ginger
  • 2 teaspoons dried, crushed sweet basil
  • Mix well in a small bowl
