Antipasto Potatoes Recipe


  • 2 14-1/2oz. cans sliced potatoes, drained
  • 1 2.25oz. can sliced ripe black olives, drained
  • 1 12oz. jar roasted peppers (water-packed), drained and julienned
  • 1 14oz. can artichoke hearts (not marinated), drained and coarsley chopped
  • 2-3 cloves garlic, finely minced
  • 1/4 cup grated parmesan cheese
  • 3-4 tablespoons extra virgin olive oil
  • 2 tablespoons butter
  • 1/4-1/2 cup seasoned breadcrumbs
