Ingredients
- 2 1/2 Cups flour
- 1 Cup Granulated sugar (+ an extra few tbsp, reserved for apples)
- 1 tsp baking powder
- 3/4 tsp Salt*
- 1/2 tsp cinnamon (+ an extra tsp, reserved for the apples)
- 2/3 Cup canola oil, or 2/3 Cup Earth Balance margarine, softened
- 2/3 Cup non- dairy milk + 2 tsp apple cider vinegar (or lemon juice)
- 2 Tbs cornstarch mixed with 1/2 Cup water
- 2 tsp vanilla extract
- 4-5 medium apples, peeled cored and cut in chunks
- 1 Tbs sugar mixed with 1 tsp cinnamon, for topping
- *Reduce salt to 1/2 tsp if using Earth Balance.
