Almond - Zucchini Babka Recipe

Ingredients

  • 1 cup unsweetened almond milk, warmed
  • 1/4 cup brown sugar
  • 1 tsp active dry yeast
  • 4 cups all purpose flour
  • 2 cups whole wheat flour
  • 1/4 tsp nutmeg
  • 1/4 cup sugar
  • Zest of 1 orange
  • 2 tbsp ground flaxseeds
  • 1/2 tsp salt
  • 12 oz shredded zucchini, squeezed dry (about 2 cups or 2 medium)
  • 1 tsp vanilla
  • 1/2 Cup Earth Balance (or other vegan) margarine, cubed, room temperature
  • --Filling--
  • 3/4 cup almond butter, warmed until very runny
  • 2 tbsp Earth Balance (or other vegan) margarine, melted
  • 3 oz miniature, bittersweet chocolate chips
  • 3 oz dried cranberries
  • 2 tbsp ground almonds
  • 1 tbsp cinnamon
