Achiote Rice Supper With Pork Carnitas Recipe

Ingredients

  • For 1/3 cup essential garlicky Achiote seasoning Paste
  • 2 T. achiote seeds
  • 2 tsp. whole allspice, preferably freshly ground
  • 1 tsp. black pepper, preferably freshly ground
  • 1 1/2 tsp. dried oregano, preferably Mexican
  • 3 tablespoons cider vinegar
  • 6 garlic cloves, peeled
  • salt, about 2 tsp.
  • 1 pound boneless pork shoulder, trimmed and cut into 1-1/2 inch cubes
  • 1 T. fresh lime juice, (optional)
  • 1 fresh long green (Anaheim) or poblano chile
  • 1 cup fresh (or defrosted frozen) peas
  • 1 cup rice, preferably medium grain
  • 1 small white onion, finely chopped
  • 1-3/4 cup broth, preferably pork or beef broth
  • 2 medium carrots, chopped into 1/4-inch dice
  • Alittle chopped cilantro, for garnish
