- For 1/3 cup essential garlicky Achiote seasoning Paste
- 2 T. achiote seeds
- 2 tsp. whole allspice, preferably freshly ground
- 1 tsp. black pepper, preferably freshly ground
- 1 1/2 tsp. dried oregano, preferably Mexican
- 3 tablespoons cider vinegar
- 6 garlic cloves, peeled
- salt, about 2 tsp.
- 1 pound boneless pork shoulder, trimmed and cut into 1-1/2 inch cubes
- 1 T. fresh lime juice, (optional)
- 1 fresh long green (Anaheim) or poblano chile
- 1 cup fresh (or defrosted frozen) peas
- 1 cup rice, preferably medium grain
- 1 small white onion, finely chopped
- 1-3/4 cup broth, preferably pork or beef broth
- 2 medium carrots, chopped into 1/4-inch dice
- Alittle chopped cilantro, for garnish
