Dijon Baked Potatoes With Cheese And Bacon Aka Twice Baked Recipe

Ingredients

  • 4 large baking potatoes, rubbed with olive oil, pierced and baked in a 400 degree oven for about 50 minutes
  • 1 cup shredded Jack or sharp cheddar cheese
  • 1/2 cup sour cream
  • 4 slices cooked bacon or ham, chopped
  • 4 green onions, chopped
  • 2 t Dijon mustard
  • 1/2-1 t hot red pepper sauce
  • chives for topping
  • Note: Substitute low fat cheese and sour cream and lean ham for a healthier version-- still good!
