Ingredients
- 4 large baking potatoes, rubbed with olive oil, pierced and baked in a 400 degree oven for about 50 minutes
- 1 cup shredded Jack or sharp cheddar cheese
- 1/2 cup sour cream
- 4 slices cooked bacon or ham, chopped
- 4 green onions, chopped
- 2 t Dijon mustard
- 1/2-1 t hot red pepper sauce
- chives for topping
- Note: Substitute low fat cheese and sour cream and lean ham for a healthier version-- still good!
