Avocado Cucumber And Onion Bar Sandwich Recipe

Ingredients

  • 2 slices of any kind of wholemeal bread (I like 'seeded batch' with plenty of added whole-grains but use whatever you please)
  • 1 avocado, halved, stone removed
  • 1 medium sized onion - finely diced
  • 4oz of diced cucumber
  • 1 or 2 cloves of minced garlic
  • 2 slices of any medium tasting cheese - typically cheddar - but any similar will do
  • 1/3rd of a tspn of cayenne pepper
  • a pinch of salt
  • a few drops of lemon or lime juice
