African Moi-moi Recipe


  • 250 g (1/2 pound) black-eyed peas (I found that comes to 1 1/2 cups)
  • 500 mL (3/4 pint) cold water
  • 1 medium onion, brown or white, finely chopped
  • 30 mL (2 tablespoons) vegetable oil
  • 30 g ( 2 tablespoons) tomato paste
  • 1 egg
  • salt and pepper to taste
  • parsley or fresh vegetables to garnish


We Hosted Some Visitors From Nigeria At A Church Potluck. I Wanted To Try To Give Them A Little Taste Of Home And Found This Recipe In A Cookbook Titled, "A Taste Of Africa" By Dorinda Hafner.
