Ingredients
- 1 cup whole wheat flour
- 3/4 cup unbleached white flour
- 1 tbsp baking powder
- 1/4 tsp salt
- 1 tsp cinnamon
- 1 cup mashed bananas (around 2 medium ones)
- 1/4 cup + 1 tbsp sugar
- 1/2 cup vanilla soymilk
- 1/3 cup + 2 tbsp applesauce**
- 2 tbsp agave nectar
- 1/4 c chopped dates
- 1/4 c chopped walnuts
- **I added 2 tbsp of applesauce to make up for the missing banana (recipe called for 1.25 cups of banana). However the muffins came out slightly gummy so I might omit the extra 2 tbsp next time.
