Apricot Cap Puddings Recipe


  • Melted butter, for greasing
  • 1/4 cup apricot jam or conserve
  • 1/3 cup flaked almonds, lightly toasted
  • 2 eggs
  • 1/2 cup caster sugar
  • 1 tsp vanilla extract
  • 125g butter, melted and cooled
  • 1 1/2 cup almond meal
  • 1/3 cup sifted self raising flour, sifted
  • 1/4 cup plain flour, sifted
  • Cream or something else to serve with


You Can Use Teacups, Ramekins, Moulds, Whatever To Make These Lil Beauties. Great With Custard, Cream , Ice Cream, Or Greek Yoghurt. Anything Really, And Anytime!
