Timpano Of Pasta Recipe

Ingredients

  • Day One:
  • For The Sauce:
  • 2 Tablespoons olive oil
  • 2 cloves of garlic, Minced
  • 1 small onion, Chopped Fine
  • 1 Stalk of celery, Finely Chopped
  • 2 or 3 Small Pieces of Meat (pork, beef, or chicken)
  • salt & pepper
  • 1/4 Cup Chopped basil
  • 1/2 Tablespoon Dried oregano
  • 1/2 Tablespoon Dried thyme
  • 1/4 Cup Chopped fresh parsley
  • Dash of red pepper flakes (Optional)
  • 2 (6oz) Cans tomato paste
  • 2 Large Cans Pureed tomatoes ( I use (26oz) Box Pomi tomatoes)
  • About 5 Cups water
  • 3 Tablespoons Grated parmesan cheese
  • Meatballs:
  • 1 lb. ground beef
  • 1/2 lb. ground pork or veal
  • salt & pepper
  • 1 or 2 cloves garlic, Minced
  • 2 Tablespoons Fresh Chopped parsley
  • 2 Tablespoons Grated parmesan cheese
  • 1 egg
  • 1 Cup Soft bread Crumbs
  • 1/2 Cup water
  • Filling:
  • 1 1/2 (500gm) Boxes Dried pasta (Short pasta Shapes Such As penne Or macaroni Are Best
  • 2 Cups mozzarella cheese, Cut Into 1 Inch Cubes
  • 1 1/2 Cups Grated parmesan cheese
  • 1 egg For Wash
