Gluten-free Dairy-free Date Carrot Muffins Recipe

Ingredients

  • 1¾ cups gluten-Free High Protein flour Blend
  • â…” cup teff flour
  • 2 tablespoons flax meal
  • ¾ cup light brown sugar or sugar
  • 2½ teaspoons double-acting
  • baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon xanthan gum
  • 1 teaspoon cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground ginger
  • Pinch nutmeg
  • ¼ teaspoon salt
  • ¾ cup finely grated carrots
  • ½ cup chopped dates
  • ½ cup unsweetened applesauce
  • 1 cup warm milk of choice (rice, soy, hemp, nut)
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla

  • gluten-Free High Protein flour Blend
  • Makes 4¼ Cups
  • 1¼ cups bean flour (your choice), chickpea flour or soy flour
  • 1 cup arrowroot starch, cornstarch or potato starch
  • 1 cup tapioca starch/flour
  • 1 cup white or brown rice flour
  • Mix ingredients together until well blended. Keep blend refrigerated in tightly covered container until used.
